Holm oak trees are critical to Spanish and Portuguese farming, with 4 million hectares of woodland pasture producing acorns to feed the renowned Black Iberian Pig. Expert arborists carry out selective pruning to maximise acorn yield, before eventually trees must be replaced. Pruned branches & felled trees are turned into a charcoal revered across the Iberian peninsula.
The charcoal burns longer than anything I've ever used - a full basket in a kamado-style BBQ can burn low 'n' slow for 20 hours or more - but it also burns fiercely hot when needed for searing. The flavour imparted is sweet and smoky, much stronger than our British charcoal or anything produced on a factory scale.
It's perfect for kamados, and all steel smokers including gravity-fed, bullets, drums and offsets. It also works brilliantly well in kettle style BBQs, but the lump size can occasionally be a bit big.
This isn't mega-factory charcoal - it supports small agricultural producers making charcoal with traditional equipment. With this in mind you shouldn't be expecting lumps that are all the same size - you'll often find lumps over 20cm but the charcoal is only graded to be 3cm or bigger, so the large lumps will be mixed with a range of sizes. Large lump size doesn't lead to longer burning - it's the density of the charcoal that makes it burn for longer, and we believe our holm oak is the densest charcoal available on the UK market. The density of the charcoal can lead to a small amount of sparking during lighting but this soon settles down - this is the trade-off for a product that burns this long and offers such good value for money.
