CLYDE PARK 2022 SAUVIGNON BLANCSauvignon Blanc is planted in a sheltered corner of a south facing hill. Soils are montmorillonite rich black volcanic clay loams over limestone. Hands on viticulture, extensive use of green inputs (composting, winter cover crops, under vine mulch) mechanical weeding, no pesticides and limited (if any) irrigation. The grapes were picked on the 11th of March, whole bunch pressed and barrel fermented over 14 days. The wine was left on lees and aged in

The grapes were picked on the 11th of March, whole bunch pressed and barrel fermented over 14 days. The wine was left on lees and aged in old oak for 5 months before bottling.
Bright, lemon-green colour in the glass. Mouth-watering acidity balanced with an oily, mineral mouthfeel. Flavours of green apples, ripe pear, grapefruit, and hints of toast on a juicy finish. Best served with fresh oysters or a spicy chicken dish.
