Crafted by Kasama, a Vancouver-based bean‑to‑bar chocolatier, this bar uses a microlot of organic cacao beans grown in Kisinga, on the southern slopes of Uganda’s majestic Rwenzori Mountains—famously known as the “Mountains of the Moon.” The beans are fermented in eucalyptus wood boxes for 5.5–6.5 days and sun-dried on raised racks for 6–7 days, preserving their nuanced character.
